<p>Stir in seasonings and transfer to crockpot. Can be refrigerated overnight. Start crockpot on LOW. When ingredients are heated, add rice. Cook until done.</p>

1 (28 oz.) can roma tomatoes, with juice<br />
2 (4 oz.) cans chopped green chili peppers, drained<br />
1 (12 oz.) can or bottle beer<br />
1 cup beef broth<br />
2 teaspoons dried oregano, crushed<br />
1-1/2 teaspoons ground cumin<br />
2 tablespoons Worcestershire sauce<br />
Salt to taste<br />
Ground black pepper to taste</p>
<p>Directions</p>
<p>In a Dutch oven, heat oil over medium heat until hot, but not smoking.</p>
<p>Pat the meat dry with paper towels and brown in batches, transferring the meat with a slotted spoon to a bowl as they are done.</p>
<p>In the fat remaining in the pot, cook the onions until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.</p>
<p>Return the meat to the pot with any juices in the bowl and add the tomatoes with juice, chilies, beer, beef broth, oregano, cumin and Worcestershire sauce. Season with salt and pepper to taste.</p>
<p>Bring to a boil and reduce heat. Simmer, partially covered, for 2-1/2 hours or until the meat is tender.</p>

<p>4 boneless, skinless chicken breasts<br />
1-1/2 cups shredded pepper jack cheese<br />
1 (4oz.) can diced green chili peppers, drained<br />
1 tablespoon dry fajita seasoning</p>
<p>Directions</p>
<p>Preheat oven to 350 degrees. Prepare a 9-inch square baking dish with nonstick cooking spray.</p>
<p>Make a deep cut into the side of each chicken breast half to form a pocket.</p>
<p>Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each chicken half. Close and secure with a toothpick so that the cheese does not escape during cooking. Place the stuffed chicken into the baking dish.</p>
<p>Season the meat with the fajita seasoning. Sprinkle the remaining cheese and chilies over the top.</p>
<p>Bake uncovered for 30 minutes until the chicken juices run clear and the cheese is lightly browned.</p>
<p>Green Chili Grilled Cheese Sandwich</p>
<p>If you love grilled cheese sandwiches, try this spiced up version.</p>

4 slices Cheddar or Monterey Jack cheese<br />

2 tablespoons butter or margarine, softened</p>

<p>Top two slices of bread with two slices of cheese. Sprinkle green chilies on top. Place the remaining bread slices on top. Butter the outside of the sandwiches.</p>

			<content:encoded><![CDATA[<p>Soup, properly made, is one of the healthiest and most enjoyable styles of cooking. While most canned soups are way too high in fats and salt, when you make it yourself, you can get the nutrition without much of the bad stuff. You can create hundreds of tasty and healthy meals using this outline of the basic steps for making healthy soups. Learn the basics and enjoy the rewards for life.</p>
<p>The Base: We&#8217;re going for simple and easy, here, so, instead of figuring out all the perfect soup base ingredients, let&#8217;s just use bouillon cubes. They&#8217;re cheap and easy to use. Just add 3 cubes to a gallon of water in a 6 quart Dutch oven or large pot. Use Chicken cubes for poultry soups and beef cubes for beef, lamb or pork. Get the water to start boiling before adding anything but the cubes. Your ingredients determine when to start the base. For example, a meat and vegetable soup can cook for 1 hour, but if bony meats and dried beans are included, it could take 2.5 hours. Actual prep time is about 30-60 minutes&#8230;the rest is simmering time.</p>
<p>The Bones: For bones (like left-over turkey, ox tails, etc.), start the base 1/2 hour early and boil the bones, then cool and remove edible parts to return to soup. Bones and shells are O.K. in soup if you warn people when serving.</p>
<p>Dried Beans, Rice, Noodles, etc: The dried stuff determines how long your soup will take to cook. Over 2 hours for dried beans, one hour for lentils, dried peas or rice, 45 minutes for noodles. I keep a variety of all that stuff in the pantry because I never know what I want to add until I&#8217;m cooking&#8230;it&#8217;s usually 3-4 different things. A total of one cup of dried stuff usually gives the soup a solid quality. If you like thinner soups, this is where to do the thinning.</p>
<p>Meat: 1 pound of meat is usually plenty for this size soup. cut in 1/4&#8243; by 2&#8243; strips. Some meats can be cooked ahead and shredded using 2 forks, for a different texture. Raw meat should be added to the soup to cook about 45 minutes.</p>
<p>Vegetables: Make sure to include 8-10 cups of raw vegetables. My main 3 vegetables are carrots, celery and onions. Any vegetable will work, so be creative. Always press and chop 3-6 buttons of fresh garlic to add. It&#8217;s a great flavor and aroma enhancer and it is very good for you. Fresh vegetables should be added to cook the last 30 minutes, except green beans (45 min) and leafy vegetables (10 min).</p>
<p>Spices: Most people add spices way too early, cooking off all their flavor. Spices should be added the last 15-30 minutes if you want to notice their contribution to the flavor of the soup. I use a lot of dried basil, fennel seeds, parsley flakes and fresh ground black pepper. This is an area of personal taste, though, so, follow my Mom&#8217;s advice. &#8220;It&#8217;s easier to put it in than to take it out.&#8221; Because the Bouillon cubes have enough salt, you should not add more.</p>
<p>If you follow this basic recipe, you can make an unlimited variety of soups. I&#8217;ve used this system for about 10-15 batches of soup per year for over 15 years. Using whatever we had at the time, none of the soups were the same, but all were enjoyed. Soup is one of the easiest ways to stretch the food dollar. The ingredients I listed cost about $ 0.50 per serving.</p>

But the crock pot is only used for &#8220;cold-weather meals&#8221; such as stews, roasts, and other hearty stick-to-your-ribs type meals. Wrong! The crock pot has truly received a seasonal stereotype and sits in many kitchen cupboards all summer long. Bring it back to your kitchen counter during the summer; there are so many benefits and fabulous light summertime meals that can be prepared in the crock pot!</p>
<p>Most people already know how wonderful crockpot cooking is; throw a few ingredients in a pot, turn it on, and come back eight hours later to a wonderful home cooked meal. We also know that cheaper cuts of meat turn out tender and juicy because they&#8217;re cooked with moist heat over long periods of time. Crock pot cooking is perfect for the busy homemaker, the office mom, the busy dad, the work-at-home mom, anyone who has anything to do during the day and is tired by dinnertime, not wanting to spend countless hours preparing dinner for their family. But crock pot cooking is also perfect for the summertime.</p>
<p>Where I live, we have humid, hot, sticky summers where the last thing I want to do is turn on my oven or fire up my gas stove, much less spend time standing around them preparing meals! During the summer I don&#8217;t crave meals like chicken and dumplings, lasagna, beef stew, or pork roast. I want light meals with little or no preparation so I&#8217;m not standing in a hot kitchen getting even warmer and stickier. So, I use my crock pot! Out of any of the cooking devices in your kitchen, it sets off very little heat and can allow you to put everything into the slow cooker in the morning (when your kitchen is cool) and spoon it up at dinnertime (when your kitchen is not).</p>
<p>Sandwiches are among our favorite summertime meals, especially paired with corn on the cob and a salad. Put a 3 pound beef or pork roast in your crock pot with 1 cup of water. Cover and cook on low for 8 hours. Remove roast and shred meat, replace to crock pot and add a bottle of your favorite barbeque sauce. Stir, cover and cook on high an additional 15-20 minutes. Serve on sandwich buns - a great summertime meal.</p>
<p>Brats are also a huge summertime meal where I live, and many techniques have been created to prepare them properly. Many simmer their brats over a low flame on their stove in beer for hours, heating up their kitchen as they do so. I use my crockpot! Place 12 brats in your crock pot, cover with 3-4 cans of beer (the cheaper the better), add one chopped onion and 4 cloves of minced garlic. Cover and cook on high 7-8 hours. Remove brats and grill over a low flame until browned. Serve in hot dog or brat buns with ketchup, mustard, minced onion, and other desired toppings.</p>

<p>BARBECUE PORK SANDWICHES<br />
1 pork roast<br />
1 bottle bar-b-cue sauce<br />
About 1/2 to 1 cup water<br />
Just throw in crockpot on high for about 6 hrs. or low for about 10 hrs. When it&#8217;s done, just remove meat from bone and serve on hamburger buns or rolls with more bar-b-que sauce or ketchup, etc.</p>
<p>CHEESY CROCKPOT CHICKEN I<br />
3 whole boneless chicken breasts<br />
2 cans cream chicken soup<br />
1 can chedder cheese soup</p>
<p>Remove all fat and skin from chicken; rinse and pat dry, sprinkle with salt, pepper and garlic powder. Put in crockpot and add the three soups straight from the cans. Cook on low all day (at least 8 hrs) do not lift the lid. Serve over rice or noodles.</p>
<p>CROCKPOT AZTEC BLACK BEANS<br />
1 lb. dried black beans (or turtle beans)<br />
16 oz. jar of salsa (your favorite kind)</p>
<p>-Rinse black beans, removing any stones or foreign objects. Cover with water, soak all night. -Drain beans and place in cp with salsa. Add enough water to just cover beans. Cover and cook on low 8-10 hours.</p>
<p>These crockpot recipes only include three ingredients, but you can always add more to them if you&#8217;d like. The American Heart Association recommends it for those who have cardiovascular problems or high blood pressure and are looking to eat a heart healthy diet. The good news is like most heart friendly diets it can also lead to weight loss.</p>
<p>The word DASH stands for Dietary Approaches to Stop Hypertension and the diet has been proven to lower blood pressure in as little as 14 days. The diet provides guidelines on how many servings from each food group should be eaten daily. To increase heart healthy minerals like, calcium, magnesium and potassium more servings of vegetables are eaten daily. When most people eat less meat and more vegetables, while cutting out junk food they end up reducing their calorie intake. Of course reducing daily calorie intake can lead to weight loss. The diet also stresses reduced sodium and for this reason processed foods should be limited, whole grains and other high fiber foods are encouraged.</p>
<p>Ironically this diet is endorsed by the Mayo Clinic, not the fad 3 day grapefruit diet which often wrongly carries the name of the Mayo Clinic in it. Anyone Looking for DASH diet recipes should get the book, The Dash Diet Action Plan by Marla Heller. The book not only has recipes but a complete 28 day meal plan and gives guidance on how to adjust calorie intake for more weight loss. It also contains more helpful tips on lowering your blood pressure by making positive changes to ones lifestyle.</p>
<p>The DASH diet is a healthy common sense approach to nutrition. It is easy to follow and though it does restrict or limit certain foods, you won&#8217;t be left feeling hungry. The diet isn&#8217;t just for those who are looking to eat heart healthy diets. Some of the recommendations like eating less processed foods can and should be part of any diet plan.</p>
